Raise your hand if you’re ready for fall! *side-eyes every single one of you who didn’t raise your hand* If we’re being honest, I’ve been waiting for autumn to arrive since, like, May. I’m so not a fan of hot weather, and the thought of water sports makes me cringe (I know, I’m sorry, I’d rather watch people face-plant into the water on their skis from the comfort of a boat, so sue me). I not-so-patiently wait all summer for the leaves to turn, for the temperature to drop, and maybe most importantly in regards to this post, for the massive influx of everything pumpkin (hashtag basic bitch and proud). That’s where these Pumpkin Pie Power Balls come in – I’m hoping if I start partaking in fall festivities early, I’ll be able to will summer into hanging its hat for the year. A pipe dream probably, but at least it yields delicious eats.
These Pumpkin Pie Power Balls (“power balls”… heh) are like little bite-sized pieces of autumn. They’re way healthier than a bowl of sugary cereal or an empty-carb filled breakfast, and they’re perfect for those “I hit snooze 12 times” mornings or if you’re on the go. Two of these babies provide almost 100% of your daily vitamin A, 8 g of protein, and 7 g of fiber. Enough to keep you satiated until lunchtime, and guys – they taste like pumpkin pie. I don’t know about you, but I am all. about. breakfast that tastes like dessert. They’re rolled in graham cracker crumbs to simulate pie crust (inarguably the best part of pie), and flavored with enough pumpkin pie spice to make you wish it was Thanksgiving already.
Pumpkin puree, rolled oats, chia seeds, carrots (don’t knock it til you try it, they add so much subtle sweetness and texture to this recipe!) and more make these little bites so tasty. Maybe my favorite part of this recipe is it comes together super fast – toss everything in a food processor, form into balls, and refrigerate. Easy as pie! (pun totally intended).
