Tonight was one of those nights. You know the ones. Those nights when maybe you’re feeling a little lazy after a long weekend. When maybe Game of Thrones is on really soon, and you can’t let cooking get in the way of THAT now can you? When maybe you’re avoiding glancing at the tempting pizza delivery coupon on the refrigerator, because it would just be so easy. Well, let me tell you, this Pesto Chickpea Quinoa Bake came to my rescue tonight.
Recently I stumbled upon Fit Food Finds’ recipe for her Cashew Chicken Quinoa Bake. Guys, it was SO good. And even better, it took me less than ten minutes to chop everything up and throw it in a pan to bake. Did you know you can cook quinoa in the oven? Just toss it in a pan, dry, and add liquid? I didn’t, and it is a TOTAL game changer.
Tonight I decided to throw together my own quinoa bake, and I am totally hooked.
This dish has so many of my favorite things: pesto, creamy goat cheese, salty olives to balance it all out. With its minimal prep time and effort, and wholesome and filling ingredients, it doesn’t get much better for an easy and healthy Sunday night meal. I can’t wait to try other varieties of this recipe – I’m thinking an enchilada or fried rice rendition is in the near future. So many possibilities! And really, any meal that only takes one pan and 5 minutes of actual effort is a total winner in my book.
And the best part? I got to watch the latest Game of Thrones before the internet could bombard me with spoilers. Is anyone else as hopelessly addicted as I am? At this rate, I’ll save that delivery pizza for next Sunday, when it looks like I’ll have actual feelings to eat (looking at you, Ramsay…).
