Summer is winding down, and while I’m so ready for autumn, I’m definitely going to miss the abundance of perfectly in-season stone fruit that has been on display at every market in town. Plums, cherries, mangos, peaches – I don’t generally think about buying these particular fruits on the regular, but this time of year I seem to always find myself packing home a bag of beautiful Rainier cherries one day, a pair of fuzzy apricots the next. And today, I fell victim to a tempting basket of peaches for less than a dollar per pound. Obviously I couldn’t not take advantage of such a deal, and thus this Peach Pesto Pita Pizza was born.
This recipe combines pesto (love), peaches (love) and goat cheese (OMG LOVE), some of my favorite things separately, so of course they would join together to make one of the most epic pizzas of all time. I *might* be feeling a little hyperbolic today, but seriously guys – this pizza is everything good in life on one lucky little pita.
And let’s just talk about the pita situation for a second. I don’t know about you, but August heat makes me supremely lazy in the kitchen. Like, there is no way I am going to exert more effort than absolutely necessary when it’s 90 degrees outside, and that is why I am forever grateful for kitchen hacks such as this. Also, I picked up these pretty bomb whole wheat, fiber-packed, non-GMO pitas that are definitely much healthier than your standard pizza crust, and portion-controlled to boot.
