Ok, raise your hand if you overindulged for the Super Bowl yesterday.
Yeah, me too. I’m not even a football person, but man do I love good snacks. And, as I mentioned on my Twitter account, I also love anything that pisses off Donald Trump. So yesterday’s game? A+ in my book, which is aptly titled “Loving Sports for All the Wrong Reasons” and is hitting shelves next month.
But I digress. Back to the topic at hand. These Chickpea Caesar Collard Wraps.
If you’re looking for something a little lighter to kick off the post-football party season, and something a little fresher to coax Spring into showing her elusive face, these wraps will be right up your alley.
First thing’s first: collard greens are PERFECT for wraps. They’re pliable, sturdy and they don’t wilt easily, so you can totally make these a few days in advance and not have to worry about a slimy salad situation (also the reason I used cabbage in the middle instead of romaine).
These babies are essentially hand-held salads, and they pack a serious punch of protein thanks to the chickpeas and the greek yogurt in the dressing.
And oh, the DRESSING. Let’s just talk about that situation.
I don’t know about you, but I LOVE caesar dressing, but HATE how heavy and rich store-bought varieties are. It’s like you have to choose between having a dry AF salad, or eating your meal’s worth of calories in dressing alone, and that’s just cruel.
Luckily, Dana from Killing Thyme’s Healthy Homemade Vegetarian Caesar Dressing was here to save the day.
Trust me, if you have an extra five minutes (FIVE minutes guys) you’re gonna want to make this dressing. It uses Greek yogurt as a lighter base, and subs out traditional anchovies in favor of salty, briny capers. It. Is. Perfection. I may never buy sub-par “healthy” bottled Caesar ever again.
And even better, it’s super easy to make – just toss everything in a blender until smooth and creamy.

Chickpea Caesar Collard Wraps

Protein-packed chickpeas and a greek yogurt dressing make these hand-held salad wraps the perfect healthy lunch.
- 3 large collard leaves
- 1 15 oz can chickpeas, rinsed and drained
- 2 cups shredded red cabbage
- 1/3 cup shredded parmesan cheese
- 1/3 cup shredded carrots
- 1 batch of Killing Thyme's Vegetarian Caesar Dressing
- Add the chickpeas, cabbage, parmesan, carrots and caesar dressing to a large bowl and stir to combine.
- Divide the mixture between three large collard leaves, and roll up burrito-style.
