I don’t know about you, but in my neck of the woods Spring is FINALLY showing her elusive face after approximately four decades of rain and gloom.
Wait, months. Four months of rain – but it’s certainly FELT like four decades. And the rain was preceded by the worst winter we’ve seen in the Pacific Northwest in quite some time. I’m usually content with the whole April showers thing, but this year I’ve been dying to finally soak up some sun.
And finally my prayers have been answered. Today I didn’t even need to wear a jacket. It’s finally happening you guys! I am SO ready for tank tops and dresses and farmers markets and camping and generally being out and about in this beautiful weather. Which, as I’m sure you know, leaves significantly less time for slaving away in the kitchen. And that’s where these easy-as-pie (pun not intended, but I’m totally leaving it) Cherry Pie Energy Bites come in.
These are seriously the perfect pick-me-up if you’re on the go and need a snack, and they keep great throughout the day. The next time I go hiking I’ll definitely be whipping up a batch of these babies to take with me.
They’re also SO simple and quick to make – in fact, you could probably have a batch ready in the time it takes you to read this post, and that’s my kinda recipe! Plus, they use just five ingredients, so no need to scribble down a mile long ingredient list. They’re sounding better and better, aren’t they?
Just a note – while I’m sure you could use any nut butter and still have these taste great, I personally think the cashew butter is essential to the whole pie thing these energy bites have going on. Cashew butter is inherently rich and unobtrusive, and it’s naturally a little sweeter than other nut butters. Alongside the slightly tart cherries, oats and graham cracker crumbs, these Cherry Pie Energy Bites are little balls of tasty pie heaven.

Healthy, simple and easy to make, these Cherry Pie Energy Bites are the perfect snack or breakfast on the go.
- 1 cup dried cherries, unsweetened
- 1 cup rolled oats
- 1/2 cup cashew butter
- 1/4 cup honey
- 2 graham crackers, smashed into crumbs
- Add all ingredients except the graham cracker crumbs to a food processor and pulse until just incorporated.
- Using your hands, form the mixture into 12 even balls.
- Roll the balls in the graham cracker crumbs, and enjoy!
